An award winning Dry Monterey Jack Cheese that is uniquely California. Hand-crafted for over 100-years, each wheel is rubbed in black pepper, cocoa and oil to cure the rind and aged for up to one year to create a rich, nutty flavor.
NICASIO VALLEY CHEESE
Formagella RW (9 ounces)
Nicasio Valley Cheese's 2022 ACS gold medal award winning Formagella is a Camembert inspiried cow's milk cheese, with a white, velvety rind. Inside is an ivory, pale yellow paste with an oozing texture. Tasting notes: Butter, slightly grassy, fungal (with the rind). Rind has aromas of mineral/cellar, with a note of mushroom.
Original Sheep Log (3 ounces)
A fresh sheep's milk cheese from the crafts-folk at Bellwether farms. Silken soft, lactic-set cheese. Slight acidity such as that found in chevre, with notes of lemon. Clean finish. Don't forget to let it reach room temperature before enjoying. Use in any place you'd use chevre. Sheep's milk is hard to come by. Bellwether is known for iconically good sheep's milk cheeses.
